Bircher Muesli Cookie Crumb

Time to treat yourself with our Bircher Muesli Cookie Crumb recipe. Start your day with flavour fun!
Ingredients:
- 1 Byron Bay Muesli Café Cookie
- 1 apple, grated
- 1 cup rolled oats
- ½ cup natural yogurt
- Large pinch of cinnamon
- 2 tablespoons crushed almonds
- ½ cup frozen or fresh blue berries
Method:
- Heat a small pot adding the blue berries and simmer stirring occasionally making sure they don’t burn. Cook until they become a syrup (add a little water if you need to stop them sticking).
- Mix the grated apple, rolled oats, cinnamon, yoghurt, almonds and crumbled Byron Bay Muesli Cookie (leaving some for garnish) in a bowl until well combined. Serve with blue berry syrup and crumble over remaining Byron Bay Muesli Cookie.
